I need to disable PoE input on my ESP32-POE ver I., because its already powered by USB (I cant use ISO version because doesnt fit phisycally in my project).I think the best way is to remove U5 from the board. Do you think this is ok, or can it cause me problems?. Thanks

You can stop the power supply from the PoE by removing D1. HOWEVER:

THIS DOESN'T FIX THE INFLUENCE ISSUE BETWEEN POE AND USB IN ESP32-POE. THERE IS STILL A PROBLEM BETWEEN THE GROUNDS OF POE AND USB!!! THE BEST IDEA IS TO DISABLE THE POE OR IF YOU NEED TO HAVE USB AND POE CONNECTED AT SAME TIME USE ESP32-POE-ISO.
