But WHY is it getting corrupted?

It does not normally happen so why is this particular board suffering?  Is it bad software (unlikely to be Linux itself) or bad power or what?

It's almost certainly hardware-related, power would be #1 suspect (including noise/RFI/EMI).

Trying to "fix" it by repairing the file system often will not work as sooner or later something important will be damaged and the system will be unusable.
