OLIMEXINO-32U4 should work with any Arduino shields both 3.3V and 5V
we never try the shields you link but there should be no problem

Hello,
some people have tried using a leonardo as ISP for a ATtiny45 here: http://arduino.cc/forum/index.php?topic=118090.0  , but we have never tried it with a 32u4.
The olimexino 32u4 comes pre-programmed with a bootloader out of the box; the arduino IDE connects to the bootloader via a USB cable and uploads your code.
