I was wondering if Olimex STM32-E407 support ST-LINK-V2 with the STM32CubeIDE for debugging. If yes, does it require any settings for it to work? Appreciate your suggestions and comments.
Sure this setup would work.
STM32-E407 has a standard JTAG connector. It can be used with any JTAG debugger that has standard JTAG connector and any environment that supports the main chip STM32F407. However, if there is no ready-to-use example for STM32-E407 board you might you would probably need more time to get every peripheral working properly.
